I boiled my polenta in vegetable broth for a little extra flavor, made it into a cake, and topped it with garlic sauteed mushrooms and freshly grated Parmesan cheese. It was good… not deeeeelicious… but good. I will have to play around with this recipe a little before posting it.

That looks tasty! Do you do a lot with Polenta? My boys are gluten free and I know that Polenta is ok for them. I’ve done a little bit with it, like frying some slices of it up and topping with shredded cheese and sauce, but I’m pretty lacking in Polenta coolness skills. Any good recipes you have for it would be greatly appreciated!
